In our CSA share this week
In the pickup for our SE Portland and Lake Oswego/Luscher Farm shareholders this week:
This week we’re excited about the Winter Sweet winter squash. This is a kabocha type squash that is both delicious and long storing. It is sweet, with a flack texture and nice depth of flavor. Try it roasted or make it into soup.
For the first time this winter you’ll also get some dry beans in the share! There are two different varieties – you’ll either get Jachob’s Cattle or Calypso. The are both delicious and go well with greens.
In fact, many cultures put beans and greens together in creative and delicious combination. One of my favorite recipes is this one from Cathy Whims at Nostrana. It calls for Italian white beans, but I have made it with the different varieties of beans and it is still wonderful.
I have also used Jachob’s Cattle or Calypso as a substitution for black beans in this Rick Bayless Classic. I often appreciate a little heat with cooked beans, so you may also want to cook them with one of the Aji dried peppers in your share. When cooked, the bean varieties in your share will likely plump up larger than the Italian white beans or Mexican black beans. They also make delicious baked beans!
