This week in your box we’re giving you what I think may be one of the most under appreciated root veggies – the Watermelon Radish! It is boring greenish white on the outside, but shocking pink on the inside. It is so beautiful and adds a splash of color wherever you use it, and it is also full of many delicious phytochemicals and antioxidants. I like to use it on salad because that is the best way to show off that fabulous color. Shave or grate it onto any salad to add a little pizzazz.

You’ll also find a bunch of Tuscan Kale Tops in the share. I know that technically we’re still deep in winter, but when my favorite kale starts to elongate, head up and form little baby buds, it gives me hope that springtime can’t be far away! And this sunny weather makes it easy to think we’re almost through the winter too! Use these Tuscan Kale Tops just as you would use the kale leaves – they make an amazing raw kale salad or they can be sautéed and added to many different dishes. I’ve recently been using kale (and collards) in pasta, to make quiche, and over polenta.
