In our final CSA pickup of 2024

I’m including more of my favorite salad recipes in the newsletter again. This Raw Shredded Apple & Beet is fresh and delicious and will last a few days in the fridge. You can also add some other veggies – like carrots or celeriac – to it if you want too. I also love this Celeriac Remolade – a very traditional French winter salad. When it comes to winter radish, I think that the purple variety that is in the share this week is one the most sweet & tasty. It is dull purple on the outside, but has a beautiful purple starburst in the center. I like to cut rounds or quarters and eat it with dip or humus. It also works well in any recipe that calls for watermelon or winter radish. There are many options at the Cook With What You Have recipe website for this and other Winter Radish.
